INGREDIENTS
Salmon (size doesn't matter - get what you like)
Dill (1 tsp chopped)
Salt (about 1/2 tsp)
Black pepper (about 1/4 tsp)
Fresh lemon (1)
INSTRUCTIONS
Grab your Instapot!
Add 1 cup water to the inner pot
Place a clean rack in the inner pot
Transfer fish to rack (skin-side down)
Sprinkle with 2 tbsp lemon juice (I cut the lemon into thirds and and squeeze one of those over the fish)
Top with lemon (I cut the other two thirds into circular slices)
Close and lock the lid, and turn the steam release handle to Sealing
Pressure cook - Steam, High, 5 min
Note: you may need to cook longer depending on the size of your Salmon
Select cancel and quick release
Use meat thermometer to ensure fish has completely cooked to at least 150oF
Garnish with dill and lemon (as needed)
Goes well with fresh spinach (recipe not included)
